I fell into the Paleo diet a few years ago, when I was diagnosed with Type 1 Diabetes. On my twelfth birthday, my parents took me to the hospital because I was very sick and, after the doctors figured out that I had type 1 diabetes, a nurse came in to consult with us about diet. She told my parents and me, “First Hannah will change her diet to avoid sugar and eat more vegetables. Then, the whole family will change to eating healthier foods.” She was right! My mom and I have researched diligently to find delicious ways to fix vegetables and healthy foods that we can enjoy at every meal. Our research led us to the Paleo diet. By avoiding dairy, grains, gluten, and following this way of eating, these recipes help me to maintain healthy blood sugars every day.
