Broccoli and Bacon Salad

  • 5 Slices Bacon
  • 1 large head broccoli
  • 3 Tablespoons balsamic vinegar
  • 3 Tablespoons Olive Oil
  • 2 Tablespoons Mayonnaise
  • 2 Tablespoons minced shallot
  • Salt and pepper to taste

  1. Cook bacon until crispy and then break apart. Chop broccoli into florets and steam for 3 or 4 minutes, until bright green. Drain in a colander and rinse with cold water. In a small mixing bowl, mix balsamic vinegar, olive oil, mayonnaise, shallots, salt and pepper. In a serving bowl, toss the broccoli with dressing and then garnish with bacon. Serve immediately.
