Tasty and pretty, this red and green salad is festive and perfect for Christmas and the holidays! It tastes delicious and packs antioxidants from both the pomegranate and the greens.  Enjoy with chicken steak or fish or add a few more pumpkin seeds or slivered almonds and make it a meal on its own!

Christmas Pomegranate and Arugula Salad

  • ¼ cup pomegranate molasses
  • ½ lemon, juiced
  • 2 tablespoons agave
  • 2 tablespoons red wine vinegar
  • ¾ cup olive oil
  • ½ cup pumpkin seeds
  • Kosher salt and freshly ground black pepper
  • 6 cups lightly packed arugula, leafy hydroponic – if available
  • 1 pomegranate seeds
  • Non-dairy, paleo cheese, such as: daiya cheddar cheese (optional)

  1. To make vinaigrette, combine molasses, lemon juice, agave and vinegar in a mixing bowl and whisk to combine.
  2. Slowly drizzle in olive oil while you whisk to emulsify.
  3. Season, to taste, with salt and pepper.
  1. Toss salad ingredients together and drizzle and toss with the vinaigrette.
  2. Sprinkle cheese on top (optional).
