Coconut Flour Flax-Berry Bread
 

Ingredients
  • ½ cup coconut flour
  • ½ cup flax seeds, ground
  • 2 tsp. whole chia seeds
  • ¼ cup freeze dried fruit, crunched up into small pieces*
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • 5 eggs
  • ¼ cup coconut oil, melted
  • ⅛ cup water (or coconut milk)
  • 1 teaspoon apple cider vinegar
  • *Note: You can substitute Spectrum Brand Ground Flax that is pre-mixed with berries or apples for the ground flax and freeze dried fruit.

Instructions
  1. Preheat oven to 325F. Grease a 7¾” × 4½” × 3″ H loaf pan.
  2. Mix all the dry ingredients, including freeze dried fruit,in a bowl.
  3. Combine all the wet ingredients in a separate bowl.
  4. Add the dry ingredients to the wet and beat with hand mixture until ingredients are combined into a thick batter.
  5. Pour into loaf pan and smooth out the top.
  6. Bake for 40 minutes or until toothpick comes out clean.
