Baked Breakfast Plantains
 
Ingredients
  • Two yellow or yellow and black plantains
  • Coconut oil
  • Cinnamon Sugar
Instructions
  1. Line cookie sheet with parchment paper.
  2. Preheat oven to 350 degrees.
  3. Cut ends off of plantains.
  4. Slice plantains down the center, lengthwise.
  5. Rub coconut oil on plantains and sprinkle with cinnamon sugar.
  6. Bake for 5 to 10 minutes on each side until golden brown. Enjoy!
