Spinach, Bacon and Artichoke Dip
 
Ingredients
  • 1 14oz can artichoke hearts
  • 3 C tightly packed baby spinach, steamed to just wilting
  • ½ cup chopped white or red onion
  • 5 thick slices of bacon, cooked to crispy and crumbled
  • ⅔ cup mayonnaise, soy free
  • ΒΌ cup paleo cheese shreds, (I use Diaya brand mozzarella shreds)
Instructions
  1. Combine artichoke hearts, spinach, onion, and mayo in a food processor and process to desired chunky consistency.
  2. Scoop into microwave safe bowl and stir in bacon crumbles and cheese.
  3. Microwave covered on high until warm and cheese starts to melt.
  4. Enjoy with celery or paleo crackers!!!
