Spring Salad
 
Ingredients
  • 3-4 ounces of cooked butternut squash, cubed
  • 3 cups mixed greens salad
  • ¼ cup shredded red cabbage
  • ¼ cup cubed ham
  • ⅛ cup pumpkin seeds
  • ⅛ cup dried cranberries
  • Balsamic vinaigrette salad dressing
Instructions
  1. Spread out the mixed greens over a plate, and sprinkle the cabbage, pumpkin seeds, and dried cranberries over the salad.
  2. Cut the ham and butternut squash into cubes and place on top of the salad.
  3. Complete the salad with Balsamic vinaigrette or your favorite salad dressing.
  4. Enjoy for lunch, dinner, or as a delicious snack!
