Fluffy Paleo Flax Bread
 

Ingredients
  • 6 Tablespoons grape seed oil
  • 3 medium or large eggs
  • 1 Tablespoon honey (1 teaspoon works just as well and adds fewer carbs)
  • ½ teaspoon apple cider vinegar
  • 1 cup flax seed meal
  • ¼ cup arrowroot starch/flour
  • ½ teaspoon baking soda

Instructions
  1. Preheat oven to 325 degrees.
  2. In a medium size mixing bowl, beat the grape seed oil, eggs, honey, and apple cider vinegar together with hand mixer. Set aside.
  3. In a smaller bowl, combine flax seed meal, arrowroot starch/flour and baking soda.
  4. With a spatula, scrape the dry ingredients into the wet ingredients and mix well.
  5. Line a large pie pan with parchment paper, so that the parchment paper lines the sides of the pan. Pour the batter into the lined pan. It will be thin.
  6. Bake at 325 degrees for 15 minutes. Insert a fork into the middle and when the fork comes out clean, the bread is finished.
  7. Let the bread cool to warm and then slice into 12 pieces.
