Paleo Lasagne
 

Ingredients
  • 1 pound ground buffalo meat
  • 2 – 15 oz. cans pizza sauce
  • 1 medium size yellow squash (zucchini also works well)
  • 1 cup shredded mozzarella cheese (we use Diaya dairy free brand)
  • 2 tablespoons of Italian Sausage Seasoning (we use Savory Spice brand)
  • 1 tablespoon butter (we use soyfree Earthbalance)

Instructions
  1. Preheat oven to 375. Coat the bottom of a 9 by 13 pan with butter or Earth Balance.
  2. Brown the ground buffalo meat in a skillet and then add the 2 cans of pizza sauce and Italian Sausage Seasoning. Simmer on low, stirring occasionally, while preparing the squash.
  3. Slice the squash into sheets, about the same thickness as traditional lasagna noodles.
  4. Layer the squash sheets on the bottom, then spread out the meat sauce over the squash sheets, and sprinkle a layer of the cheese. Repeat layers, ending with the cheese on top.
  5. Cover the pan and bake in the 375 degree oven for 10 to 20 minutes or until the cheese melts on top.
