With Thanksgiving coming up, everybody is thinking of turkey, mashed potatoes, green beans, and cranberry sauce. All dinner foods.  But…nobody ever thinks about breakfast. I mean, breakfast is still a part of Thanksgiving too, right? We don’t have to wait to start giving thanks for everything and celebrating with food until dinner, so, this Pumpkin Pie Granola goes right along with the season, and is a great way to start your Thanksgiving Day.

Pumpkin Pie Granola
 

Ingredients
  • 1 cup pumpkin seeds
  • 1 cup flax seeds
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 2 packets stevia
  • ½ cup pumpkin puree
  • 3 cups large shredded coconut
  • ¼ cup water
  • ¼ cup coconut oil (melted)

Instructions
  1. Place pumpkin seeds, flax seeds, cinnamon, nutmeg, salt and stevia in a food processor and pulse until chunky and blended.
  2. Place coconut flakes into a large bowl and stir in seed mixture.
  3. Place ½ cup of fresh, steamed pumpkin or ½ cup canned pumpkin, water and melted coconut oil into food processor and puree until smooth.
  4. Stir pumpkin puree mixture into granola mixture and stir until well combined.
  5. Line two cookie sheets with parchment paper and spread granola mixture evenly between both cookie sheets.
  6. Bake at 350 degrees for 14 to 17 minutes or until very light golden and crispy.
  7. Stir half way through baking and Enjoy!
