Quick Cream of Spinach Soup
 

Ingredients
  • 2 cups fresh, washed spinach
  • ½ yellow onion
  • 2 cup cubed carrots
  • 2 ribs cubed celery
  • 1 cup chicken broth
  • 1 cup heavy, non-dairy cream
  • 2 Tablespoons arrowroot or tapioca starch
  • ½ cup non-dairy cheese

Instructions
  1. Heat broth on medium-high and add carrots, celery and onion, simmering until carrots are tender.
  2. Place all ingredients, including broth mixture in blender and blend until smooth. Makes 4 cups.
