Smoked Sweet Potato Kielbasa Skillet
 

Ingredients
  • 1 pound sweet potato
  • 1 pound kielbasa sausage cut into fourths
  • ½ cup onion
  • 2 garlic cloves, minced
  • 1 green pepper, cubed
  • 2 tablespoons coconut oil
  • ¼ teaspoon black pepper
  • 1 Tablespoon Sweet Smoked Spanish Paprika
  • 1 cup of spinach

Instructions
  1. In a Dutch oven, brown the sausage in 2 tablespoons coconut oil; remove and set aside.
  2. In the same pan, saute sweet potato until tender but still firm.
  3. Add the remainder of the ingredients and cook, covered and stirring every few minutes, for 10 minutes.
  4. Add the spinach and cover, cooking until spinach is wilted. Serves 4.
