Banana Chocolate Chip Coconut Flour Cookies
- 2 large ripe bananas
- 2 eggs
- 4 tbsp coconut oil (melted but room temperature)
- 2 tbsp. vanilla extract
- 1 tsp. baking soda
- ¼ tsp baking soda
- ¼ tsp salt
- ¼ cup chocolate chips
- Preheat oven to 325 degrees.
- Line 2 baking sheets with parchment paper.
- Combine wet ingredients in food processor. Blend until smooth. Pulse food processor to blend.
- Scrape mix into bowl and fold in chocolate chips.
- Scoop out cookie dough with a teaspoon onto cookie sheets and smooth tops and sides into a nice round cookie.
- Bake at 325 degrees for 35 minutes or light golden.
