Pumpkin Pie Granola
- 1 cup pumpkin seeds
- 1 cup flax seeds
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon salt
- 2 packets stevia
- ½ cup pumpkin puree
- 3 cups large shredded coconut
- ¼ cup water
- ¼ cup coconut oil (melted)
- Place pumpkin seeds, flax seeds, cinnamon, nutmeg, salt and stevia in a food processor and pulse until chunky and blended.
- Place coconut flakes into a large bowl and stir in seed mixture.
- Place ½ cup of fresh, steamed pumpkin or ½ cup canned pumpkin, water and melted coconut oil into food processor and puree until smooth.
- Stir pumpkin puree mixture into granola mixture and stir until well combined.
- Line two cookie sheets with parchment paper and spread granola mixture evenly between both cookie sheets.
- Bake at 350 degrees for 14 to 17 minutes or until very light golden and crispy.
- Stir half way through baking and Enjoy!
