Frozen Coconut Eskimo Pies
- 2 cups unsweetened shredded coconut
- ½ cup homemade coconut butter (see recipe below Eskimo Pie recipe)
- ½ cup coconut oil plus 2 tablespoons coconut oil to melt with chocolate chips
- 1 teaspoon vanilla extract
- ⅛ teaspoon salt
- 1 packet of stevia
- 1 bag (10oz) of dark chocolate chips (if you avoid chocolate, carob chips taste great in this recipe too)
- Place shredded coconut, coconut butter, coconut oil, vanilla, and salt into a food processor and blend until you get a slightly chunky texture.
- Place 12 parchment paper muffin cups in muffin pan. Scoop out about 2 tablespoons coconut mixture and place into muffin tins. Press down until flat.
- Once all muffins liners are filled, melt chocolate with 2 tablespoons coconut oil in a double boiler or microwave. Mixture should be creamy and smooth.
- Scoop out about 1 tablespoon of chocolate and spread onto each coconut cups until the coconut to completely cover the coconut cup.
- Place in freezer for about 20 minutes or until chocolate is frozen.
- These will be very hard so you may need to let one sit for a couple minutes at room temperature before biting in.
- Keep in fridge prevent chocolate from melting.
- Enjoy these mouth watering treats anytime of the day!
- Pour coconut flakes into food processor and run for about 10 minutes, scraping sides about every 3 minutes.
- Coconut butter should be smooth and creamy.
