Spring Salad
- 3-4 ounces of cooked butternut squash, cubed
- 3 cups mixed greens salad
- ¼ cup shredded red cabbage
- ¼ cup cubed ham
- ⅛ cup pumpkin seeds
- ⅛ cup dried cranberries
- Balsamic vinaigrette salad dressing
- Spread out the mixed greens over a plate, and sprinkle the cabbage, pumpkin seeds, and dried cranberries over the salad.
- Cut the ham and butternut squash into cubes and place on top of the salad.
- Complete the salad with Balsamic vinaigrette or your favorite salad dressing.
- Enjoy for lunch, dinner, or as a delicious snack!
