Coconut Blueberry Muffins
 

Ingredients
  • 3 eggs
  • 3 tablespoons dairy-free butter
  • 2 tablespoons applesauce
  • 1 tablespoons agave
  • ⅛ teaspoon salt
  • ½ teaspoon vanilla
  • ¼ cup coconut flour
  • ½ teaspoon baking powder
  • ½ cup fresh blueberries

Instructions
  1. Mix eggs, butter, applesauce, agave, salt and vanilla.
  2. Add coconut flour, baking powder and mix until there are no lumps.
  3. Fold in blueberries (be sure they are dry).
  4. Pour batter into 6 parchment paper muffin cups.
  5. Bake at 400 degrees for 15 – 17 minutes or until slightly golden.
