Delicious, healthy, diabetic friendly, low carb wonderful microwave flax muffins. Quick and easy, these tasty muffins hit the spot with breakfast, lunch, dinner or as a snack! I love to eat them with tea and a bit of all fruit jam in the afternoon!!!
Microwave Flax Muffins
Ingredients
- 3 T. ground flax seeds
- ½ t. baking powder
- 1 t. melted butter (or melted coconut oil)
- 1 egg
- 1 and ½ t. agave nectar
- 1 and ½ t. applesauce
- ¼ t. vanilla extract
- 1 t. cinnamon
- 5 drops liquid stevia
Instructions
- Put all wet ingredients into a 4 inch ramiken and mix with a fork.
- Add dry ingredients to ramiken and mix with fork.
- Microwave on HIGH for 1 minute and 30 seconds.
- Put onto a plate and enjoy with butter or non-dairy spread and jam or just enjoy as it is.
