Coconut Flour Bread
Ingredients
- ¼ cup plus 1 tablespoon flax meal
- ½ cup water
- ¾ cup coconut flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 4 eggs
- ½ cup coconut oil (melted)
- 1 Tablespoon agave nectar or honey
- 1 teaspoon apple cider vinegar
Instructions
- Combine flax meal and water in a bowl and set aside for 9 minutes.
- Preheat oven to 350 degrees.
- Grease a bread loaf pan with coconut oil and coat with coconut flour.
- Combine the following ingredients in a food processor: coconut flour, baking soda and salt.
- Add the eggs, coconut oil, agave, flax and water mixture and vinegar.
- Place batter into loaf pan and bake for 40 minutes.
- Insert a knife into the middle of the loaf and if it comes out clean, the loaf is done.
- Place pan on cookie rack and cool bread in pan for 1 hour before slicing.
- Serves 12. Enjoy!
