Sweet Plantain Biscuits
 

Ingredients
  • 3 Tablespoons coconut oil
  • 2 brown plantains
  • 1 Tablespoon agave nectar or honey
  • 1 Tablespoon applesauce
  • 1 Tablespoon maple extract
  • ¼ cup melted coconut oil
  • 3 eggs
  • 1 Tablespoon canned coconut milk
  • 3 Tablespoons coconut flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • ⅛ teaspoon salt

Instructions
  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. Cut the ends off of the plantains and down the middle and then peel them.
  3. Cook siced plantains in 3 tablespoons of oil until golden.
  4. Place plantains and all liquid ingredients in food processor and blend until smooth.
  5. Then, add all of the dry ingredients and puree until smooth.
  6. Scoop out biscuits onto lined baking sheet with ice cream scoop and bake for 20 minutes or until golden and cooked through.
  7. Let cool thoroughly and enjoy with butter and jam!
