Sweet Plantain Biscuits
Ingredients
- 3 Tablespoons coconut oil
- 2 brown plantains
- 1 Tablespoon agave nectar or honey
- 1 Tablespoon applesauce
- 1 Tablespoon maple extract
- ¼ cup melted coconut oil
- 3 eggs
- 1 Tablespoon canned coconut milk
- 3 Tablespoons coconut flour
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- ⅛ teaspoon salt
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- Cut the ends off of the plantains and down the middle and then peel them.
- Cook siced plantains in 3 tablespoons of oil until golden.
- Place plantains and all liquid ingredients in food processor and blend until smooth.
- Then, add all of the dry ingredients and puree until smooth.
- Scoop out biscuits onto lined baking sheet with ice cream scoop and bake for 20 minutes or until golden and cooked through.
- Let cool thoroughly and enjoy with butter and jam!
