Quick Cream of Spinach Soup
Ingredients
- 2 cups fresh, washed spinach
- ½ yellow onion
- 2 cup cubed carrots
- 2 ribs cubed celery
- 1 cup chicken broth
- 1 cup heavy, non-dairy cream
- 2 Tablespoons arrowroot or tapioca starch
- ½ cup non-dairy cheese
Instructions
- Heat broth on medium-high and add carrots, celery and onion, simmering until carrots are tender.
- Place all ingredients, including broth mixture in blender and blend until smooth. Makes 4 cups.
