Chocolate Ice Cream
 

Ingredients
  • 1 (13 ounce) can full fat coconut milk
  • ½ cup soft pitted dates
  • ⅔ cup unsweetened coconut milk
  • ½ cup cacao powder
  • 1 and ½ teaspoon vanilla extract
  • ¼ teaspoon xanthan gum, optional
  • 20 drops liquid stevia or 2 stevia packets

Instructions
  1. Place can of coconut milk, and dates in a food processor and process until smooth.
  2. Add ingredients that remain and process until smooth.
  3. Refrigerate mixture for 30 minutes to and hour
  4. Pour mixture into ice cream machine and follow directions to make ice cream.
  5. Serve immediately or freeze until ice cream hardens and then allow to thaw for 15 minutes for pretty scoops
