This is the BEST strawberry ice cream I have ever tasted, with zero refined sugar! It follows our motto of: diabetic friendly, low carb, paleo and healthy. One cup of strawberries packs over 100% of our RDA Vitamin C requirements! Today, I was really looking forward to a little treat because I had weight training this morning, swim team practice after school and about 6 hours of homework. It is nice to have a little guilt-free “sweet”. Enjoy!
Strawberry Ice Cream
Ingredients
- 1 (13 ounce) can full fat coconut milk
- 2 cups unsweetened, organic, frozen strawberries
- ½ cup soft pitted dates
- ⅔ cup unsweetened coconut milk
- 1 and ½ teaspoon vanilla extract
- ½ teaspoon xanthan gum, optional
- 20 – 30 drops liquid vanilla stevia or 2 stevia packets
Instructions
- Place can of coconut milk, strawberries and dates in a food processor and process until smooth.
- Add ingredients that remain and process until smooth.
- Pour mixture into ice cream machine and follow directions to make ice cream.
- Serve immediately or freeze until ice cream hardens and then allow to thaw for 15 minutes for pretty scoops.
