Paleo Vanilla Cupcakes
 

Ingredients
Cupcakes:
  • ½ cup plus 2 Tablespoons coconut flour
  • 4 eggs
  • 2 egg whites
  • ¼ cup chopped dates
  • ¼ cup Stevia (I use Stevia in the Raw cup for cup that measures like sugar.)
  • 1 cup coconut milk
  • 2 teaspoons vanilla extract
  • ½ teaspoon baking soda
Frosting:
  • 1 can full fat coconut milk (use only the solid part; drain off all of the liquid)
  • ¼ cup organic palm shortening
  • 2 TBSP Agave Nectar (or puree ¼ cup dates for lower glycemic version)
  • 20 – 30 drops of vanilla flavor liquid stevia (or to taste)

Instructions
Cupcakes:
  1. Preheat oven to 350 degrees and line 12 cupcake holders with parchment paper muffin cups.
  2. Combine all of the ingredients together in a large bowl and mix until it forms an even batter.
  3. Scoop equal amounts of the batter into each cupcake well.
  4. Bake for 15-20 minutes or until the tops are firm to the touch.
  5. Remove from the oven. Let the cupcakes cool completely before frosting them.
Frosting:
  1. Mix all ingredients with a hand mixer and frost cupcakes. Enjoy!
