This dip is the perfect low-carb snack to munch on any time and goes perfectly with peapods, celery, carrots, and any kind of Paleo cracker. It’s always nice to have this around Christmas (or any time really) because while everyone else is eating their high-carb, slightly unappetizing-looking dips, you can be enjoying this delicious, healthy, and Paleo option. I just made this for New Year’s Eve and the entire bowl of it was gone before anybody had even touched the other dips! And also, bacon is a part of this dip, so it’s always a plus to have a few extra pieces of bacon to munch on while you are making the rest of the dip!
Spinach, Bacon and Artichoke Dip
Ingredients
- 1 14oz can artichoke hearts
- 3 C tightly packed baby spinach, steamed to just wilting
- ½ cup chopped white or red onion
- 5 thick slices of bacon, cooked to crispy and crumbled
- ⅔ cup mayonnaise, soy free
- ¼ cup paleo cheese shreds, (I use Diaya brand mozzarella shreds)
Instructions
- Combine artichoke hearts, spinach, onion, and mayo in a food processor and process to desired chunky consistency.
- Scoop into microwave safe bowl and stir in bacon crumbles and cheese.
- Microwave covered on high until warm and cheese starts to melt.
- Enjoy with celery or paleo crackers!!!
