Frozen Coconut Eskimo Pies
 

Ingredients
  • 2 cups unsweetened shredded coconut
  • ½ cup homemade coconut butter (see recipe below Eskimo Pie recipe)
  • ½ cup coconut oil plus 2 tablespoons coconut oil to melt with chocolate chips
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 1 packet of stevia
  • 1 bag (10oz) of dark chocolate chips (if you avoid chocolate, carob chips taste great in this recipe too)

Instructions
  1. Place shredded coconut, coconut butter, coconut oil, vanilla, and salt into a food processor and blend until you get a slightly chunky texture.
  2. Place 12 parchment paper muffin cups in muffin pan. Scoop out about 2 tablespoons coconut mixture and place into muffin tins. Press down until flat.
  3. Once all muffins liners are filled, melt chocolate with 2 tablespoons coconut oil in a double boiler or microwave. Mixture should be creamy and smooth.
  4. Scoop out about 1 tablespoon of chocolate and spread onto each coconut cups until the coconut to completely cover the coconut cup.
  5. Place in freezer for about 20 minutes or until chocolate is frozen.
  6. These will be very hard so you may need to let one sit for a couple minutes at room temperature before biting in.
  7. Keep in fridge prevent chocolate from melting.
  8. Enjoy these mouth watering treats anytime of the day!
Instructions for Coconut Butter:
Ingredients
-1 package coconut flakes
-A food processor
Instructions:
  1. Pour coconut flakes into food processor and run for about 10 minutes, scraping sides about every 3 minutes.
  2. Coconut butter should be smooth and creamy.
