Cauliflower Wraps
 

Ingredients
  • 2 cups riced cauliflower
  • 2 eggs
  • salt and pepper

Instructions
  1. Preheat oven to 375 degrees. Line cookie sheet with parchment paper.
  2. Shred cauliflower florets with a food processor. Measure out 2 cups and microwave 2 minutes. Squeeze out any water from the cooked cauliflower between two paper towels. Microwave for 2 more minutes.
  3. Mix cauliflower, eggs and salt and pepper in a bowl.
  4. Scoop out mixture with ¼ cup and place on parchment paper. Flatten out to a thin pancake.
  5. Bake at 375 degrees for 10 minutes. Flip pancakes and cook for 5 more minutes.
