Cauliflower Wraps
Ingredients
- 2 cups riced cauliflower
- 2 eggs
- salt and pepper
Instructions
- Preheat oven to 375 degrees. Line cookie sheet with parchment paper.
- Shred cauliflower florets with a food processor. Measure out 2 cups and microwave 2 minutes. Squeeze out any water from the cooked cauliflower between two paper towels. Microwave for 2 more minutes.
- Mix cauliflower, eggs and salt and pepper in a bowl.
- Scoop out mixture with ¼ cup and place on parchment paper. Flatten out to a thin pancake.
- Bake at 375 degrees for 10 minutes. Flip pancakes and cook for 5 more minutes.
