Paleo “Cheesecake”
Ingredients
- 1 cup Plain or Vanilla Sugar Free Coconut Yogurt (I use Sodelicious brand)
- 1 teaspoon fresh squeezed lemon juice
- ¼ teaspoon grated organic lemon peel
- ½ teaspoon pure vanilla extract (or a bit more to taste)
- 10 – 20 drops liquid stevia (depending on sweetness)
- ½ teaspoon agave nectar (optional)
- 1 Tablespoon freeze dried fruit (optional)
Instructions
- Mix all ingredients together and let stand for 5 minutes to blend flavors.
- Top with freeze dried fruit.
