Chocolate Ice Cream
Ingredients
- 1 (13 ounce) can full fat coconut milk
- ½ cup soft pitted dates
- ⅔ cup unsweetened coconut milk
- ½ cup cacao powder
- 1 and ½ teaspoon vanilla extract
- ¼ teaspoon xanthan gum, optional
- 20 drops liquid stevia or 2 stevia packets
Instructions
- Place can of coconut milk, and dates in a food processor and process until smooth.
- Add ingredients that remain and process until smooth.
- Refrigerate mixture for 30 minutes to and hour
- Pour mixture into ice cream machine and follow directions to make ice cream.
- Serve immediately or freeze until ice cream hardens and then allow to thaw for 15 minutes for pretty scoops
