Coconut Flour Flax-Berry Bread
Ingredients
- ½ cup coconut flour
- ½ cup flax seeds, ground
- 2 tsp. whole chia seeds
- ¼ cup freeze dried fruit, crunched up into small pieces*
- ¼ teaspoon salt
- 1 teaspoon baking soda
- 5 eggs
- ¼ cup coconut oil, melted
- ⅛ cup water (or coconut milk)
- 1 teaspoon apple cider vinegar
- *Note: You can substitute Spectrum Brand Ground Flax that is pre-mixed with berries or apples for the ground flax and freeze dried fruit.
Instructions
- Preheat oven to 325F. Grease a 7¾” × 4½” × 3″ H loaf pan.
- Mix all the dry ingredients, including freeze dried fruit,in a bowl.
- Combine all the wet ingredients in a separate bowl.
- Add the dry ingredients to the wet and beat with hand mixture until ingredients are combined into a thick batter.
- Pour into loaf pan and smooth out the top.
- Bake for 40 minutes or until toothpick comes out clean.
