Favorite Zucchini, Flax & Coconut Flour Muffins
Ingredients
- 4 eggs
- 2 tablespoons melted coconut oil
- 1 tablespoon applesauce
- 10 drops liquid stevia
- 1 teaspoon vanilla
- ¼ cup shredded zucchini
- ¼ cup coconut flour (plus 1 tbsp.)
- ¼ cup ground flax seeds
- 1 teaspoon cinnamon
- ½ teaspoon baking powder
- Pinch salt
- ¼ cup raisins (optional)
Instructions
- Preheat oven to 350 degrees and line muffin pans with parchment paper liners.
- Shred zucchini and place between paper towels to remove moisture from shreds.
- In medium mixing bowl, beat eggs until frothy.
- Add oil, applesauce and liquid stevia and zucchini.
- In small mixing bowl, combine coconut flour, ground flax seeds, cinnamon, baking powder and salt.
- Add dry ingredients to wet ingredients and mix with hand mixer until well blended.
- Add raisins if desired.
- Divide evenly into six muffins.
- Bake at 350 degrees for 17 minutes.
- Remove from oven and enjoy!
