Flourless Chia Waffles
Ingredients
Waffles
- 5 medium organic eggs
- ½ cup organic heavy cream or full fat unsweetened coconut milk
- 5 and ½ Tbs. Earth Balance (or butter), melted and slightly cooled to warm
- ⅓ cup ground chia seeds
- ⅓ cup ground flax seeds
- ¼ Tbs. baking powder
Topping
- 1 can full fat coconut cream (refrigerated)
- 1Tbs. maple syrup
- 2 drops liquid stevia (optional)
Instructions
Directions for Waffles or Pancakes:
- Combine eggs, cream and melted butter or coconut oil and wisk or mix with mixer.
- Combine chia seeds, flax, salt and baking powder in separate bowl with a fork.
- Fold into egg mixer with a fork and allow to sit for 25 minutes.
- Pour ¼ cup into well-heated and oiled waffle iron (some waffle irons do not require oil) or in a skillet on stove.
- Cook until golden.
Directions for topping:
- Spoon the solid part of the coconut cream out of the can of coconut into a small mixing bowl and combine with maple syrup and stevia.
- Mix and put on top of the warm Chia Waffles.
