Hit the Spot Butternut Squash hot cereal
Ingredients
- 1 cup unsweetened coconut milk.
- ¼ cup ground chia seeds
- ⅛ cup flax meal
- ⅛ cup hemp seeds
- 16 ounces cooked butternut squash
- 2 teaspoons cinnamon
- 4 tablespoons shredded coconut
- 10 drops of stevia or to taste
- ¼ dried fruit (optional)
Instructions
- Place cooked squash in food processor or mash with fork until mashed potato consistency.
- Pour coconut milk into small saucepan and heat to hot, but not boiling.
- After the coconut milk is hot, add chia seeds and turn stove to simmer.
- Stir chia often for 5 minutes and then add flax meal, hemp seed, cinnamon and stevia.
- Cook until begins to thicken (about 3 minutes).
- Add squash to mixture and stir until heated through.
- Pour into 4 bowls and top each bowl with 1 tablspoon shredded coconut and dried fruit of choice (optional). Enjoy!
