I have not had fried chicken for about five years. It didn’t even cross my mind that a good, paleo fried chicken recipe existed. Until I found this recipe, I had pretty much resigned myself to eating plain chicken for the rest of my life. So, you can imagine my surprise and excitement when I found this recipe(!!!!!). Additionally, this “Fried” Chicken is not even fried in unhealthy oil- it’s just baked with a delicious outside crumbly layer. This Paleo Fried Chicken is healthier and tastier than any other fried chicken- enjoy!
Paleo Fried Chicken
Ingredients
- 1 – 6 ounce bag Chicharrones or other brand of crunchy pork rinds
- 2 large eggs
- 5 tablespoons butter, melted and slightly cooled
- 12 chicken boneless chicken thighs
- Salt and pepper
Instructions
- Preheat the oven to 400°F. Cover a rimmed baking sheet with parchment paper
- Place the pork rinds in a heavy plastic bag and seal. Roll with a rolling pin or crush the bag with your hands until the rinds become coarse crumbs.
- Wisk the eggs into the melted butter. Dip the thighs into the egg-butter mixture and let the excess drip off. Shake the thighs in the bag with the crushed pork rinds, pressing lightly to help them adhere to the meat. Place the thighs on the parchment paper lined baking sheet.
- Roast for 25 minutes or until done. Serve warm. Salt and pepper to taste.
