Paleo Ham and Cheese on a Plantain “Bun”
Ingredients
The “Bun”
- 1 green plantain
- 2 tablespoons of melted Coconut oil
- Salt (to taste)
Ham and Cheese
- (substituting bacon, lettuce and tomato for the middle would also be yummy!)
- Ham sliced for sandwiches
- Baby spinach or baby lettuce leaves
- Slices of cheese (I use Daiya brand cheddar cheese, to avoid dairy)
- Pickles (optional)
Instructions
- For “the bun”, peel plantain and slice into 2 inch thick rounds.
- Place into boiling rounds for approximately 5 minutes or until soft.
- Put soft rounds into a mini food processor and add 1 or 2 tablespoons of coconut oil.
- Process until the mixture is in crumbles and sticks together.
- Scrape the sides of the food processor and place plantain mixture between two cookie sheet sized pieces of parchment paper.
- Roll out to desired thickness and cut into fun shapes with a cookie cutter.
- Fry these shapes in coconut oil in a frying pan until slightly crispy. Flip with spatula and cool on a wire rack.
- Place the ham, lettuce and cheese between two slices of “bun”.
