Parsnip and Apple Hot Cereal
 

Ingredients
  • 2 large parsnips
  • 2 small apples (or 1 medium size and 1 small apple for sweeter cereal)
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • pinch of salt
  • ⅔ cup of chia seeds
  • 1 and ½ cup non-dairy milk (Hannah uses coconut milk)
  • 1 tablespoon vanilla exract
  • 20 drops of stevia or 2 stevia packets

Instructions
  1. Wash apples and parsnips.
  2. Peel the skin off of the parsnips.
  3. Shred parsnips and apples on grater or with a food processor. Set aside.
  4. In a medium sized pot, combine the milk, cinnamon, nutmeg, salt, vanilla and stevia.
  5. Wisk together to combine and then add parsnip and apple shreds.
  6. Turn stovetop up to medium and stir mixture often for about 5 minutes to soften the parsnip and apple shreds.
  7. Add the chia mixture and continue stirring until chia seeds begin to expand and thicken up the cereal.
  8. Once the cereal reaches a desired consistency (in 5 to 7 minutes), divide into 4 bowls. Enjoy!
