Smoked Sweet Potato Kielbasa Skillet
Ingredients
- 1 pound sweet potato
- 1 pound kielbasa sausage cut into fourths
- ½ cup onion
- 2 garlic cloves, minced
- 1 green pepper, cubed
- 2 tablespoons coconut oil
- ¼ teaspoon black pepper
- 1 Tablespoon Sweet Smoked Spanish Paprika
- 1 cup of spinach
Instructions
- In a Dutch oven, brown the sausage in 2 tablespoons coconut oil; remove and set aside.
- In the same pan, saute sweet potato until tender but still firm.
- Add the remainder of the ingredients and cook, covered and stirring every few minutes, for 10 minutes.
- Add the spinach and cover, cooking until spinach is wilted. Serves 4.
