Coconut Flour Pancakes
Ingredients
- 4 eggs (separated)
- 4 tablespoons coconut oil (melted)
- 4 tablespoons coconut milk
- 1 teaspoon agave nectar or honey
- 10 drops stevia or 1 packet stevia
- ¼ teaspoon salt
- 4 tablespoons coconut flour
- ¼ teaspoons baking powder
Instructions
- Whip egg whites until stiff peaks form.
- In a separate bowl, beat together egg yolks, oil, coconut milk, agave, stevia and salt.
- Fold whipped egg whites into egg yolk mixture and stir to blend.
- Heat one tablespoon of coconut oil in a skillet and spoon batter onto heated skillet, making pancakes between 2 and 2 and ½ inches in diameter.
- Makes 10 pancakes. Yum!
