Banana Chocolate Chip Coconut Flour Cookies
 

Ingredients
  • 2 large ripe bananas
  • 2 eggs
  • 4 tbsp coconut oil (melted but room temperature)
  • 2 tbsp. vanilla extract
  • 1 tsp. baking soda
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ¼ cup chocolate chips

Instructions
  1. Preheat oven to 325 degrees.
  2. Line 2 baking sheets with parchment paper.
  3. Combine wet ingredients in food processor. Blend until smooth. Pulse food processor to blend.
  4. Scrape mix into bowl and fold in chocolate chips.
  5. Scoop out cookie dough with a teaspoon onto cookie sheets and smooth tops and sides into a nice round cookie.
  6. Bake at 325 degrees for 35 minutes or light golden.
