Coconut Flour Bread
 

Ingredients
  • ¼ cup plus 1 tablespoon flax meal
  • ½ cup water
  • ¾ cup coconut flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 4 eggs
  • ½ cup coconut oil (melted)
  • 1 Tablespoon agave nectar or honey
  • 1 teaspoon apple cider vinegar

Instructions
  1. Combine flax meal and water in a bowl and set aside for 9 minutes.
  2. Preheat oven to 350 degrees.
  3. Grease a bread loaf pan with coconut oil and coat with coconut flour.
  4. Combine the following ingredients in a food processor: coconut flour, baking soda and salt.
  5. Add the eggs, coconut oil, agave, flax and water mixture and vinegar.
  6. Place batter into loaf pan and bake for 40 minutes.
  7. Insert a knife into the middle of the loaf and if it comes out clean, the loaf is done.
  8. Place pan on cookie rack and cool bread in pan for 1 hour before slicing.
  9. Serves 12. Enjoy!
