Coconut Flour Pancakes
 

Ingredients
  • 4 eggs (separated)
  • 4 tablespoons coconut oil (melted)
  • 4 tablespoons coconut milk
  • 1 teaspoon agave nectar or honey
  • 10 drops stevia or 1 packet stevia
  • ¼ teaspoon salt
  • 4 tablespoons coconut flour
  • ¼ teaspoons baking powder

Instructions
  1. Whip egg whites until stiff peaks form.
  2. In a separate bowl, beat together egg yolks, oil, coconut milk, agave, stevia and salt.
  3. Fold whipped egg whites into egg yolk mixture and stir to blend.
  4. Heat one tablespoon of coconut oil in a skillet and spoon batter onto heated skillet, making pancakes between 2 and 2 and ½ inches in diameter.
  5. Makes 10 pancakes. Yum!
