Favorite Zucchini, Flax & Coconut Flour Muffins
 

Ingredients
  • 4 eggs
  • 2 tablespoons melted coconut oil
  • 1 tablespoon applesauce
  • 10 drops liquid stevia
  • 1 teaspoon vanilla
  • ¼ cup shredded zucchini
  • ¼ cup coconut flour (plus 1 tbsp.)
  • ¼ cup ground flax seeds
  • 1 teaspoon cinnamon
  • ½ teaspoon baking powder
  • Pinch salt
  • ¼ cup raisins (optional)

Instructions
  1. Preheat oven to 350 degrees and line muffin pans with parchment paper liners.
  2. Shred zucchini and place between paper towels to remove moisture from shreds.
  3. In medium mixing bowl, beat eggs until frothy.
  4. Add oil, applesauce and liquid stevia and zucchini.
  5. In small mixing bowl, combine coconut flour, ground flax seeds, cinnamon, baking powder and salt.
  6. Add dry ingredients to wet ingredients and mix with hand mixer until well blended.
  7. Add raisins if desired.
  8. Divide evenly into six muffins.
  9. Bake at 350 degrees for 17 minutes.
  10. Remove from oven and enjoy!
