Flourless Chia Waffles
 

Ingredients
Waffles
  • 5 medium organic eggs
  • ½ cup organic heavy cream or full fat unsweetened coconut milk
  • 5 and ½ Tbs. Earth Balance (or butter), melted and slightly cooled to warm
  • ⅓ cup ground chia seeds
  • ⅓ cup ground flax seeds
  • ¼ Tbs. baking powder
Topping
  • 1 can full fat coconut cream (refrigerated)
  • 1Tbs. maple syrup
  • 2 drops liquid stevia (optional)

Instructions
Directions for Waffles or Pancakes:
  1. Combine eggs, cream and melted butter or coconut oil and wisk or mix with mixer.
  2. Combine chia seeds, flax, salt and baking powder in separate bowl with a fork.
  3. Fold into egg mixer with a fork and allow to sit for 25 minutes.
  4. Pour ¼ cup into well-heated and oiled waffle iron (some waffle irons do not require oil) or in a skillet on stove.
  5. Cook until golden.
Directions for topping:
  1. Spoon the solid part of the coconut cream out of the can of coconut into a small mixing bowl and combine with maple syrup and stevia.
  2. Mix and put on top of the warm Chia Waffles.
  3. Enjoy!
