Delicious, healthy, diabetic friendly, low carb wonderful microwave flax muffins.  Quick and easy, these tasty muffins hit the spot with breakfast, lunch, dinner or as a snack!  I love to eat them with tea and a bit of all fruit jam in the afternoon!!!

Microwave Flax Muffins
 

Ingredients
  • 3 T. ground flax seeds
  • ½ t. baking powder
  • 1 t. melted butter (or melted coconut oil)
  • 1 egg
  • 1 and ½ t. agave nectar
  • 1 and ½ t. applesauce
  • ¼ t. vanilla extract
  • 1 t. cinnamon
  • 5 drops liquid stevia

Instructions
  1. Put all wet ingredients into a 4 inch ramiken and mix with a fork.
  2. Add dry ingredients to ramiken and mix with fork.
  3. Microwave on HIGH for 1 minute and 30 seconds.
  4. Put onto a plate and enjoy with butter or non-dairy spread and jam or just enjoy as it is.
