Cauliflower Rice

  • 1 head of cauliflower
  • 1 tbsp butter or paleo dairy free butter alternative, such as soy free Earth Balance
  • Salt and pepper, to taste
  • This recipe makes 2-3 servings, depending on the size of your cauliflower.

  1. Remove leaves and stem from cauliflower; discard. Grate the entire head of cauliflower until it resembles rice in a food processor.
  2. Steam grated cauliflower in a steamer until tender but not mushy.
  3. Place in a bowl with butter and salt and pepper to taste
