Hit the Spot Butternut Squash hot cereal
 

Ingredients
  • 1 cup unsweetened coconut milk.
  • ¼ cup ground chia seeds
  • ⅛ cup flax meal
  • ⅛ cup hemp seeds
  • 16 ounces cooked butternut squash
  • 2 teaspoons cinnamon
  • 4 tablespoons shredded coconut
  • 10 drops of stevia or to taste
  • ¼ dried fruit (optional)

Instructions
  1. Place cooked squash in food processor or mash with fork until mashed potato consistency.
  2. Pour coconut milk into small saucepan and heat to hot, but not boiling.
  3. After the coconut milk is hot, add chia seeds and turn stove to simmer.
  4. Stir chia often for 5 minutes and then add flax meal, hemp seed, cinnamon and stevia.
  5. Cook until begins to thicken (about 3 minutes).
  6. Add squash to mixture and stir until heated through.
  7. Pour into 4 bowls and top each bowl with 1 tablspoon shredded coconut and dried fruit of choice (optional). Enjoy!
