This is the BEST strawberry ice cream I have ever tasted, with zero refined sugar! It follows our motto of:  diabetic friendly, low carb, paleo and healthy. One cup of strawberries packs over 100% of our RDA Vitamin C requirements!  Today, I was really looking forward to a little treat because I had weight training this morning, swim team practice after school and about 6 hours of homework.  It is nice to have a little guilt-free “sweet”.  Enjoy!

 

Strawberry Ice Cream
 

Ingredients
  • 1 (13 ounce) can full fat coconut milk
  • 2 cups unsweetened, organic, frozen strawberries
  • ½ cup soft pitted dates
  • ⅔ cup unsweetened coconut milk
  • 1 and ½ teaspoon vanilla extract
  • ½ teaspoon xanthan gum, optional
  • 20 – 30 drops liquid vanilla stevia or 2 stevia packets

Instructions
  1. Place can of coconut milk, strawberries and dates in a food processor and process until smooth.
  2. Add ingredients that remain and process until smooth.
  3. Pour mixture into ice cream machine and follow directions to make ice cream.
  4. Serve immediately or freeze until ice cream hardens and then allow to thaw for 15 minutes for pretty scoops.
